The 38 Essential Mexico City Restaurants

Image
Barbacoa Gonzalitos Barbacoa and chicharron tacos in Roma Norte, a rooftop for golden hour cocktails, a homey Baja hangout for oxtail noodles, the best stands in maze-like La Merced market, and more of CDMX’s best meals The first thing any visitor to the Mexican capital will take in — probably while staring out the window in awe as their airplane descends over the intense, urbanity-on-steroids sprawl — is the sheer size of this town, 573 square miles in total. It’s densely populated and patchworked with distinct neighborhoods, each with its own culinary identity. It would take several lifetimes to get to know all of the street stands, holes in the wall, neighborhood favorites, and high-end destinations in this city. Yet this list — 38 restaurants, dishes, and culinary experiences that define Mexico City’s gastronomic identity — should offer a comprehensive starting point for any visitor. It includes the obvious and the overexposed; it also includes hidden gems. It covers longtime ...

I Really Miss My George Foreman Grill

Image
Salton A fascinating emblem of the ’90s, it inspires a complicated nostalgia I remember a few faddish kitchen appliances from my mom’s apartment. A juicer somewhere in the upper cupboards, its presence signaled by the lone juicing cookbook on the kitchen counter. A waffle iron that pressed an image of Snoopy into your breakfast, and seemingly existed only to get tangled with the other pans. A popcorn machine that came out for the occasional sleepover, ultimately “lost” in a move. But there was one that remained, a weekly workhorse that to my young mind, no household should have been without. This is all to say I really miss my George Foreman Grill. The George Foreman Grill was a fascinating phenomenon of the ’90s. Unlike with the microwave or blender, there was no brand comparison to be done, no generic version. Sure, 36 percent of households may now have an air fryer, made by Cuisinart or Ninja or Cosori. But in a 2000 interview, Gary Ragan, a spokesman for the company that m...

There Are Too Many Celebrity Cooking Shows

Image
Selena Gomez on the set of Selena + Chef | Jennifer Rose Clasen/HBO Max Florence Pugh is the latest celebrity to join the growing list of food shows that prioritize fame over cooking ability Chefs have, of course, been celebrities for a long time. Emeril Lagasse has been on television longer than most of Gen Z has been alive, and Julia Child helped kick off the genre in the 1960s with the premiere of her series The French Chef . But now the phrase “celebrity chef” is taking on an entirely new meaning as actors, musicians, and other people in the public eye — including those, like Paris Hilton, who are famous for simply being famous — helm their own cooking shows. The latest entrant into this increasingly crowded field is it-girl Florence Pugh. In a recent interview on the Happy Sad Confused podcast, Pugh announced that a TV version of her popular Instagram cooking series Cooking With Flo is “in the works,” though she didn’t say when exactly fans could expect to see it on the ...

The 12 Best Cookbooks of Spring 2023

Image
Marylu Herrera /Eater New titles from Hetty Lui McKinnon, Nigel Slater, Andrea Nguyen, and more capture the excitement and promise of the season There’s nothing like a fresh crop of cookbooks to capture the promise of spring: With all those new foods to make and new ideas to absorb comes the realization that creation and innovation are a constant, no matter what the world is doing. The following 12 titles, chosen from a very bounteous roster, deliver on that promise, and then some. Most of them have little in common, save the verve with which they explore their subjects and their implicit message that every day is worthy of at least a little celebration. You’re here and you’re able to feed yourself , they all seem to say. Why not make something great? How London’s Two-Michelin-Starred Ikoyi Makes Its Signature Plantain Dish

Image
The plantain is exactly 13-and-a-half centimeters every time At London’s Ikoyi , chef Jeremy Chan uses West African ingredients to make dishes that are wholly his own. “It’s the spice, it’s the heat, it’s the pungency,” says Chan. “We are paying respect to the ingredients.” That approach has earned Ikoyi a Michelin star, with a menu that includes aged sirloin topped with caviar, moin moin-inspired dumplings, and their signature dish: a perfect 13-and-a-half-centimeter buttermilk plantain. “What’s neat about this dish is the discipline and technique that’s being applied to this ingredient, almost moreso than any other ingredient in the kitchen,” says Chan. “Because we feel like there’s this absolute idea of what the perfect Ikoyi plantain is.” Chefs start by cutting the plantain in half the long way, and slicing them further into the 13-and-a-half-centimeter shape. Once they are perfectly shaped, they get marinated and brushed with buttermilk, tossed in plantain flour, and stored u...

My Vintage Pizza Hut Pan Lets Me Live Out All My Book It! Fantasies

Image
With a vintage Pizza Hut pan, you can make your very own personal pan pizza. This one, though, is from D.C. restaurant Tigerella. | Tigerella/Eater All you need to make your very own personal pan pizza is the pan itself Like any vaguely nerdy child of the ’80s and ’90s, I was obsessed with Book It!, the pro-reading promotional program run by Pizza Hut back in the day. The gist: read a bunch of books, get a free personal pan pizza (with pepperoni, always with pepperoni). And nothing tasted quite as delicious to nine-year-old Missy as that greasy, gooey, mini pizza that came after reaching the goal. I swear it isn’t just nostalgia that drives my fond memories of that pizza: Pizza Hut pizzas just tasted better back then . Was it better quality ingredients? Actual fresh dough ? Am I fooling myself? Or did it have something to do with... the pan? I’m not the only one who thinks those pans — 6-inch, seasoned, short-lidded round pans that seem to retain heat impressively well — had to p...
