Happy World Shochu Day! Celebrate with this cocktail from Martiny’s . Cheers! Maia Martiny’s  (New York, New York) Created by Takuma Watanabe, Owner of Martiny’s  Ingredients: 1.5 oz.  iichiko Saiten 2 oz. Fresh Pineapple Juice 0.5 oz. Yuzu 0.5 oz. Fresh Basil Syrup Preparation:  Add all ingredients to a shaker tin, shake, then pour into a coupe glass with ice. Garnish with a basil leaf. On the nose, iichiko Saiten is redolent with aromas of honeydew melon, white grape, pickled watermelon rind and kabosu citrus. There are also hints of soy, white pepper and rich barley notes. On the palate, iichiko Saiten has a strong start and a long finish. It exudes rich umami notes of jasmine tea, white peach, minerals and earth with some citrus and a saline finish that beckons another sip. Its complex flavors offer exciting options for mixing in cocktails. The post Maia appeared first on Chilled Magazine . from Cocktails Archives | Chilled Magazine https://ift...

Everything You Ever Wanted to Know About Persimmons

Image
Sophia Pappas With their honeyed flavor and jammy texture, luscious persimmons are some of the best seasonal eating known to humankind “Persimmons look and taste like the fall season,” says Rachel Sullivan, the farm assistant at Frog Hollow Farm, a Brentwood, California, farm currently in the middle of its annual persimmon harvest. Seeing Frog Hollow’s orchards change color and the fruit turn “bright orange,” she says, “is the perfect welcome to fall.” In various parts of the world, particularly Asia, nothing welcomes the harvest season quite like a luscious persimmon, a fruit long prized for its jammy texture and honeyed flavor. But here in the United States, persimmons haven’t attained quite the same instant association with fall, taking a distant back seat to pumpkins and other members of the gourd family. And that’s a shame, because they happen to be some of the best seasonal eating known to humankind. So without further ado, let’s take a closer look at autumn’s sweetest treat...

When Cheese Can Tell the Future

Image
Lille Allen/Eater; Source: Getty Images The Kitchen Witch brings the ancient art of tyromancy — divination through cheese — to the modern day Throughout history, people have sought answers about the unknown. But predicting fates and futures hasn’t always been synonymous with tarot cards and oracles; sometimes, it comes down to what you eat or drink. Food has long been used for predictive purposes, perhaps due to its accessibility — think of the reading of tea leaves, or telling fortunes with Turkish coffee . Though each society has its own versions of food divination, shape interpretation is the common ingredient in countless fortunes told. In the 1700s, “pulling the kale” was a popular way to predict the qualities of one’s future mate based upon the traits of the pulled-up plant. (Scottish poet Robert Burns mentions the practice in his 1785 poem, “Halloween.”) In some ancient forms of flour divination (aleuromancy), flour and water sloshed in a bowl left shapes of residue to rea...

It’s Always Sunny on Food Instagram

Image
So bright. | Shutterstock Sharp shadows and bright sun are the latest way food influencers are striving for relatability I tell myself it’s the lighting in my apartment that has kept me from becoming an Instagram cooking sensation. I have southern exposure, perfect for growing tomatoes on my slip of a balcony but not for any sort of windowsill photo shoot. The sunlight is too harsh, the shadows too long, and I never seem to be able to find an angle that doesn’t reveal the silhouette of my hand over the bowl. But if Instagram and TikTok are to be believed, now is my time. The gauzy, filtered light favored by social media food influencers just a few years ago has given way to what looks like perpetual late morning or late afternoon. In food photos, warm, direct sunlight makes for deeply saturated colors, and the occasional glint off of a shiny glaze , and everything is given extra definition by long, sharp shadows. It doesn’t even matter if your hand gets in the way , or if the lig...
