How to Deep-Fry a Turkey Without Hurting Anyone

Inspired by conversations on the  Food52 Hotline , we're sharing tips and tricks that make navigating all of our kitchens easier and more fun. Today's question: How do you deep-fry a turkey? How long do you deep-fry a turkey? How much oil do you need to deep-fry a turkey? And, finally: Should you deep-fry a turkey? Spoiler alert: The answer is yes. Come Thanksgiving, our annual celebration is to set up the deep fryer and invite our friends and their birds over to deep-fry turkeys, one after another. The last few years we’ve deep-fried eight turkeys for Thanksgiving. We could do more in the same pot of oil, but we run out of daylight and enthusiasm. This way we get friends over for a couple of hours, and then send 'em home. Read More >> from Food52 https://ift.tt/2Y6rEDm via IFTTT

In Protest of Bad Treatment by Corporate and Customers, Instacart Workers Consider Walk-Off

Ryan/The Boston Globe via Getty Images The organization Gig Workers Collective is calling for a work stoppage on October 16 Gig Workers Collective, a grassroots organization fighting for better treatment of independent contractors, has announced planning for a walk off for Instacart shoppers on October 16. The group says shoppers will cease work until Instacart meets five demands, which include better pay and benefits. “We know that in order for us to see change, we need to hit Instacart where it hurts,” Willy Solis, a member of Gig Workers Collective, told Vice . “We’re organizing the walk-off because the company continues to ignore us. Our goal is to get Instacart to engage with us.” In its announcement , Gig Workers Collective details the absurd conditions and pay structures currently experienced by Instacart shoppers. “In 2019, when [Instacart founder] Apoorva Mehta publicly apologized for supplementing pay with tips in response to our protests , the company ...

I Rode the New Ratatouille Ride at Disney World Before Everyone Else and It Smelled Amazing

Image
The Walt Disney Company For anyone who ever worked in a real restaurant, it may also smell familiar Because the opening of the Ratatouille ride at Walt Disney World on October 1 is as good a reason as any, here now, a weeklong exploration of the 2007 rat-infested Pixar classic, Ratatouille. A gig at Disney World must be a dream for set designers. Whether you’re stepping into Wendy, John, and Michael’s bedroom before boarding the Peter Pan ships, touring through a museum-level exhibit of yeti lore ahead of the Expedition Everest roller coaster, or browsing a market inside a dark temple within Epcot’s Mexico, Disney achieves a level of escapism that’s difficult to rival. It’s a repellent to some — Disney’s brand of earnest, fanciful, corny, expensive make-believe. But for the fans, the Disneyphiles (hi there), those extra touches and details are the hook. In that regard, there’s plenty to appreciate with the Ratatouille -themed expansion of the France Pavilion in Epcot’s...

We've Had 50 Blessed Years of Cooking With Crockpot

Crockpots have been a staple of American home cooking for decades. They’ve been there through the high school graduations , the Super Bowl victories and losses , the first day of school, Saturday mornings and Sunday nights. This beloved family-friendly slow cooker has been there with us through life’s biggest moments and now it’s our turn to celebrate it. The original slow-cooker brand is celebrating its 50th anniversary in a big way—with the launch of an all-new Design Series line featuring four new Crockpots in an array of modern hues. "With the new Design Series—and our 50th anniversary—we wanted to celebrate our history and highlight Crockpot’s evolution, but not get too nostalgic. To do that, we focused on synthesis, bringing together past, present, and future. It’s about bringing the next generation of at-home cooks an iconic appliance but with a modern look they’ll love to cook meals in and make memories,” says Christine Robins, CEO of Home Appliances at Newell Brands, tod...

Two friends and I have been building a beautiful app & website at CraftedPour.com (and soon to be in the app stores) for posting original cocktails and sharing to various social media that link back to a single page. We're doing this because we think bartenders and other cocktail creators are the authentic influencers in the spirits world. We want to provide a better way for them to get visibility and even earn money and better jobs. One of my friends posted about this here a few months ago and got a lot of positive feedback from this community. Since then, we've gone fully interactive, and you can now post and edit your recipes and profiles in real-time. Right now, you can use CraftedPour.com to: - Host your cocktail creator profile , and post that link as your link in bio on Instagram and elsewhere so people can find your entire recipe portfolio in one place - Post your recipes with ingredients, backstories, photos, and video, and share the link and content t...

All the Michelin Stars Awarded to U.S. Restaurants in 2021

Image
Celebrated French restaurant Pasjoli in Los Angeles received one star for the first time. | Wonho Frank Lee After a year off for the pandemic, the tire company has returned with a vengeance but with many of the same predictable selections The Michelin Guide, the vaunted star-bestowing restaurant list assembled by a tire company, completed its reveal of its 2021 guides across the United States in September. While many reviewers have foresworn star ratings at restaurants still reckoning with the effects of the pandemic, Michelin had no such compunctions this year, releasing the guides for the first time since 2019 on a dining world that remains undeniably changed. How does that translate into the dining landscapes of major cities in the U.S.? True to form, the theme of the 2021 Michelin guide selections stuck to mostly Eurocentric and Japanese selections, leaving out major swaths of the U.S. culinary landscape. In Los Angeles , Washington, D.C. , and New York , Michelin inspectors ...

Don’t Laugh, but Really: What Is a Bunghole?

Image
SergeBertasiusPhotography /Shutterstock And how do you cauterize it humanely? It’s no surprise that we have a weird thing for barrels here at Eater. We’ve visited the Adirondack Barrel Cooperage in Ramsen, NY, and traveled to Loretto, KY to witness the Maker’s Mark factory in action . Now, on this week’s Gastropod, hosts Cynthia Graber and Nicola Twilley are leading us even deeper into the fire pot to learn more about barrels’ importance. Can using a different kind of wood to make barrels open up a whole new world of whiskey and wine flavors — and restore a vanishing ecosystem? But before we let Cynthia and Nicola get into that, let’s get the important question out of the way: What exactly is a bunghole? Those who binged MTV in the ‘90s might know it from Beavis and Butt-Head and believe it or not, “bunghole” has actually been a slang term for an anus since the 1600s. People from New England are possibly familiar with Bunghole Liquors , a booze shop with the subtle slogan “...

Whole Foods Is Now Charging for Grocery Delivery — But Free Delivery Was Always a False Promise

Image
Marekuliasz/Shutterstock Free grocery delivery has served to cloak the human cost of labor, leading consumers to expect a free service that was never really free If going to the grocery store and having groceries delivered costs pretty much the same amount of money, why would anyone go to the grocery store ever again? What was always desirable service became even more in demand during the pandemic, when so many people were trying to avoid packed aisles and endless lines. While the pandemic is very much not over, the days of free grocery delivery are — at least from Whole Foods: On October 25, Amazon will institute a $9.95 delivery surcharge on Whole Foods Market deliveries nationwide. With the increased demand for grocery delivery during the pandemic, Whole Foods deliveries more than tripled between 2019 and 2020, according to the Washington Post . While the company had hoped this spike would boost profits, it drove costs instead. Add to that the unpredictable yo-yoing prices and ...

Halloween Inspired Cocktails.

Hey everyone, at the end of October I'll be hosting a large Halloween/birthday party combined. More than likely around 30ish people who all have different tastes. I was looking for a list of maybe like 3-5 things to offer served at the party, and looking for some fun ideas that you guys may have or have tried for people and found a hit. I appreciate any and all of the ideas big or small. Remember different tastes, so I'm not just looking for really sweet or really bitter. A nice collection that fits a theme. The 5 Best Substitutes for Evaporated Milk

It’s a classic recipe blunder: You’ve assembled your mise en place, preheated the oven, even carefully buttered and floured the pan. Then, you see it: “one cup of evaporated milk.” It was right there in the ingredients list the whole time, of course, but you’re definitely just seeing it for the first time now. You poke around the pantry in hopes you’ll get lucky. While you do find four cans of pumpkin, six cans of garbanzo beans, condensed milk, coconut milk , AND powdered milk, there’s no evaporated milk to be found. What now? Go back to the store? Uh, no thanks. If you’ve already cooked the pasta and started the bechamel sauce for ultra-creamy macaroni and cheese , you’re not going to stop now. If you’ve had your heart set on baking ice cream or a mud cake, the craving isn’t just going to go away because you’re out of evaporated milk. Abandon the recipe and make something else? Less than ideal. The answer: none of the above, because there are actually plenty of substitutes for evap...

Need help with a pumpkin spice rimming syrup

I recently had a pumpkin spice martini at a restaurant. The drink was good so I asked the bartender for the recipe. What I failed to ask was what was on the rim of the glass. It was not just sugar and spice stuck to the side like I would with other drinks but somehow a candy-like consistency, not runny but sticky, and held to the glass. I could feel grains of sugar and spice as if in a paste. Anyone know what I'm talking about? Any help making it would be appreciated. submitted by /u/Toadfish91 [link] [comments]

Why Box Wine Is Your Best Bet This Thanksgiving (& Beyond)

Box wine is sometimes jokingly referred to as “Cardbordeaux,” thought of as a college party drink we wouldn’t serve on a sophisticated table. But we’re here to tell you that times, they are a-changin'. The newer, upscale boxes from smaller domestic producers or cult European importers are a maybe-overlooked, actually optimal choice for this year’s meal—once opened, they store up to a month in the refrigerator. In Europe, “bag in a box” wines are a growth segment, popular because they’re sustainable—less packaging, less fuel burned in transportation, smaller carbon footprint—and low-cost, usually coming in at $20 to $40 for four-bottles-worth of volume. Here, they can be an insider trick; one of the biggest markets in the U.S. for this wine are chefs in higher-end kitchens who “want wine that is of a higher quality to use in cooking, and stays fresh longer,” says Camilo Ceballos, wine director of New York–based wine importer Omni Wines . 15 Pop-Inspired Accessories for When You Want to Wear Your Food

There’s something really intuitive about accessories inspired by food. It feels so straightforward to adorn our bodies with the elements of nature we most need to survive and thrive, yet for some reason this trend has only really blossomed recently. But I think food accessories have staying power—not least because during the pandemic, food and cooking and taste were the few sensual delights we were left with for months at a time. That definitely made me really appreciate the juiciness of an heirloom tomato and long for the days of a simple brunch. Heck, the pandemic is why I decided to try dragonfruit for the first time—it was a completely novel experience during a year of sameness. Below I'm sharing some of the food accessories I've found that stand out as unique, charming works of art—whimsical creations that can make me laugh or gasp, and conversation pieces that will have any fellow foodie doing a double take. A Brief History of Canadian Thanksgiving

With the distinctive fragrance of pumpkin spice hanging in the air, many have begun rhapsodizing over the fourth Thursday in November...aka Thanksgiving! As a pie baker tasked with the orchestration and execution of hundreds of pies (over 700 last year), Thanksgiving is a holiday I love on a personal level, yet struggle with professionally. Staring down stacks of needy pie plates clamoring for attention, I find myself instead preoccupied, almost giddy, with anticipation of the second Monday in October, which is Canadian Thanksgiving. In 2021, Canadian Thanksgiving will fall on Monday, October 11th (also known as Annie and Hallie’s birthday in The Parent Trap , but I digress). American Thanksgiving conjures images of ginormous turkey legs and cornucopias spilling with grapes, gourds, and multi-colored corn. There are mashed potatoes and creamed corn and green bean casserole and dinner rolls and stuffing (so. much. stuffing). We envision Pilgrims sporting tall black hats adorned w...

22 Gifts for the Co-Workers You Can’t Wait To See

Even as we continue to work from home, we’re spending more time on calls with our work families than our real families. And while the past two years have been a rollercoaster to say the least, they’ve also helped us bond in a special way that makes us appreciate our co-workers more. Normally, we would celebrate the holidays with an office party, happy hour, or even an in-person white elephant gift exchange, but since we can’t, a thoughtful gift and a FaceTime call will have to do. And by thoughtful, we don’t mean another bottle of wine—although we’ll never say no to that . We mean coffee books that transport them around the world, DIY jewelry kits they can use with their kids, and even dog treat makers for their furry BFFs—all under $50 because hey, we love our team, but we still have rent to pay. Anyone using an iSi Soda Siphon? What kind of chargers do you use, and is there a way to get them refilled?

Hi all, I drink a lot of seltzer water in my cocktails, and I'm looking to get an iSi Soda Siphon for home use. The cartridges are not cheap from iSi themselves, but the only other company on Amazon has bad reviews for a chemical taste. If I stuck with iSi cartridges, it will be $1.50 per liter of soda which isn't that much savings. I'm new to this, so do the cartridges just get recycled afterwards? Is there no way to refill them? Seems like a lot of waste for not much product. Thanks! submitted by /u/_tangus_ [link] [comments]
