Advice on batch wedding mocktail that would be easy to spike

We have a lot of family that doesn’t drink, so I would love a specialty mocktail that could be batch made, but that can be easily spiked with liquor for those that would like that. Fiancé’s specialty cocktail will use whiskey, so Im thinking rum or tequila for this. Not a fan of gin. Thoughts on Bombay Sapphire?

I recently grabbed a bottle of Bombay Sapphire to try, as I'm trying to figure out which of the "budget" Gins I'd like to keep on my shelf (Tanqueray, Beefeater, etc). I've read rave reviews of it, but it honestly left me...underwhelmed. It wasn't bad it was just kind of...uninspired? Tried it in a Gin and Tonic, and found the tonic way more overbearing than I have with other gins. Also tried it in an Aviation and Corpse Reviver #2, two of my go-to gin drinks, and again, something was off. Did I get a bad bottle? Are there cocktails this gin shines in? I'm genuinely looking for advic, not trying to put BS down.
