Homemade Potato Ruffles

These homemade potato ruffles are, essentially, potato chips. And yet they’re more than that. They’re fancy-schmancy, shatteringly crisp, conversation-stopping potato chips. They’re sufficiently, satiatingly crisp and crunchy enough to polish off as quickly as you can cook them up.
